Tallow made of kidney fat (aka suet) is the purest, most nutrient-dense type of tallow, and produces a mild, flavour and aroma that doesn't over power other ingredients.
In our grandparents generation, this was their multi-purpose fat used for literally everything. Whether they were baking pastries, roasting vegetables, cooking meat, conditioning leather/wood, crafting soaps, making candles and skin balms, this tallow did it all. It was a household necessity.
